- Blue cheese and brocolli soup - Juliet Bawden
A delicious inexpensive and filling soup for colder days when you need a comforting dish quickly. This dish will fill you up and keep you going for hours.
Winter warmer Broccoli and blue cheese soup
Autumn has reached the northern hemisphere. Many of us will be taking bracing walks in inclement weather to ward off those autumnal blues. What more do you need to come home to than something quick and easy to make. This soup is the answer. Make it before you go on one of your walks, and all it will need is some heating up, so you can have it for lunch or supper, on your return. For those on a gluten free diet forego the crusty bread that goes with it.
A very easy way to make soup that can be as inexpensive or luxurious as your bank balance dictates.
Traditionally this soup is made with Stilton, and if you have any left over at Christmas it is a great way to use it up. However Stilton is expensive and it is probably a waste to buy it specially to make soup.
Many supermarkets have basic ranges and they often bag up the broken pieces of broccoli and sell them at a reduced rate. So not only is this economical but it also saves you the job of cutting! Blue cheese can be bought from a basic range, and it works very well.
This quantity will make enough soup for 2-3 people
Note: You may want to change the cheese/ broccoli ratio, depending on whether you like your soup to taste more creamy or more of vegetables.
You will need
300g broccoli pieces
200 g of blue cheese
I clove of garlic
1 vegetable stock cube
1 litre of water
Salt and pepper to taste
A hand blender.
Instructions
1. Put the water on to boil. Peel and chop the garlic and put it in a saucepan.
2. Clean the broccoli florets and add them to the saucepan. Leave one small floret to use as a garnish.
3. Add the stock cube, cover with the water. Simmer until the broccoli is soft.
4. Using a hand blender if you have one, or a sieve if you haven't , blend the soup until it is smooth.
5. Put the soup back on a low heat, and crumble the cheese into it, and stir.
6. Season to taste. Chop up the floret you put to one side and add it to the soup. Pour the soup into bowls.
7. Serve by itself or with warm crusty bread.
